Desirée’s Boozy Fruit Cake

Some of you out there may know this fruit cake as Alton Brown’s Free Range Fruit Cake. If you are craving that dense brick with the techno-colored dyed fruit that people joke about using as a door stop or paper weight, this ain’t it. This fruit cake recipe has it’s roots in history. In a time and place where bread was still sliced at home. A time packages were sent by ye old fashioned sailing ships and ye old fashioned horse drawn carriage. This fruit cake is made in the spirit of the historic way with spices and dried fruits than it’s aged in booze so if you want to send it the long way, you can. It starts with a mixture of dried fruits such as currents and candied ginger; orange and lemon zest are added to round out the flavors. The dried fruits than have a party together with rum in a sealed container for the next day and night. The now rum filled fruit is tossed into a batter alongside pecans. Scents of allspice, ginger, cinnamon, and clove tickle your nose when you pour the batter into the pan. Here is where the boozy part comes in. After baking and cooling the fruit cakes spend the next few weeks being bathed in brandy every day or two. This fruit cake’s texture and density is between a banana bread and a carrot cake. I may also substitute whisky for the brandy.
